- 2 yellow peppers cut into strips
- 2 red peppers cut into strips
- 4 courgettes (zucchini) cut into strips
- 1 butternut sliced or cut into chip shapes
- Olive oil
- Salt to taste
- Place the vegetables on a baking tray. Dry roast for a few minutes at 180 degrees Celsius, until golden.
- Drizzle with a little olive oil, sprinkle salt and serve.
