Ingredients

  • 2 yellow peppers cut into strips
  • 2 red peppers cut into strips
  • 4 courgettes (zucchini) cut into strips
  • 1 butternut sliced or cut into chip shapes
  • Olive oil
  • Salt to taste

Instructions

  1. Place the vegetables on a baking tray. Dry roast for a few minutes at 180 degrees Celsius, until golden.
  2. Drizzle with a little olive oil, sprinkle salt and serve.
