Easy Vegan Banana Bread (Gluten Free)

Ingredients

3 Ripe Bananas

1 Cup Brown Sugar (I use coconut sugar*)

½ Cup of vegetable oil (I use melted coconut oil*)

2 tsp Vanilla Extract

2½ Cups All Purpose Flour (I use Nature’s Choice Gluten Free Cake Flour*)

½ tsp Sea salt (I use pink Himalayan salt*)

1 tsp ground Cinnamon

2 pinches Nutmeg

1 tsp Baking Powder

 

Optional:

½ cup crushed Walnuts*

1 banana sliced lengthways to be placed on batter just before putting into the oven*

  

Instructions:

  1. Preheat the oven to 180 °C.
  2. Mash the bananas well in a bowl (or blend at medium speed in the blender for a smoother batter). Add the coconut sugar, coconut oil and vanilla.
  3. In another bowl, mix together the flour, salt, cinnamon, nutmeg and baking powder. Gently fold the dry ingredients (including walnuts if using) into the wet ingredients. If using all-purpose flour, you may need to add a dash of liquid (water or almond milk).
  4. Pour into a greased (I grease and line with wax paper) 9x5 loaf pan and place sliced bananas on top of batter and bake for 60 – 70 minutes.

 Makes 1 loaf
