Easy Vegan Banana Bread (Gluten Free)

Ingredients
3 Ripe Bananas
1 Cup Brown Sugar (I use coconut sugar*)
½ Cup of vegetable oil (I use melted coconut oil*)
2 tsp Vanilla Extract
2½ Cups All Purpose Flour (I use Nature’s Choice Gluten Free Cake Flour*)
½ tsp Sea salt (I use pink Himalayan salt*)
1 tsp ground Cinnamon
2 pinches Nutmeg
1 tsp Baking Powder
Optional:
½ cup crushed Walnuts*
1 banana sliced lengthways to be placed on batter just before putting into the oven*
Instructions:
- Preheat the oven to 180 °C.
- Mash the bananas well in a bowl (or blend at medium speed in the blender for a smoother batter). Add the coconut sugar, coconut oil and vanilla.
- In another bowl, mix together the flour, salt, cinnamon, nutmeg and baking powder. Gently fold the dry ingredients (including walnuts if using) into the wet ingredients. If using all-purpose flour, you may need to add a dash of liquid (water or almond milk).
- Pour into a greased (I grease and line with wax paper) 9x5 loaf pan and place sliced bananas on top of batter and bake for 60 – 70 minutes.
Makes 1 loaf
