  • 1 Green Pepper
  • 1 Onion (chopped)
  • 3 medium eggplants (cubed)
  • 3 Tomatoes (chopped)
  • 2-4 Tbspns Nutritional Yeast
  • 4-5 Tbspns Oil
  • Salt (to taste)



  1. Sauté onion for 1 minute
  2. Add Green Pepper and sauté for another 1 minute
  3. Add Eggplant and leave on for about 5 minutes.
  4. Add tomatoes and let simmer for 7-10 minutes.
  5. Add salt and nutritional yeast to taste.
